Revuelto Gramajo is a typical Argentine scrambled egg dish that always uses the same three ingredients: crispy shoestring (Julienne) fries, eggs, and ham. Delicious as a lunch or main meal, but also a great breakfast option that can help ease a hangover ….
Lunch or main course, 4 people. Preparation time: 25 minutes.
Halve the onion and cut into thin slices, about 2-mm thick. Clean the sweet pepper and cut into thin strips. Peel the garlic cloves and slice them very thinly. Heat 2 tablespoons of olive oil in a large non-stick frying pan and gently sauté the onion and garlic over a low heat, stirring regularly, until the onion becomes translucent. Add the sweet pepper and the peas and sauté for a few minutes over a slightly higher heat.
Meanwhile, cut the ham into strips. Finely chop the parsley. Add the ham to the frying pan and fry briefly, then season with salt and pepper.
Beat the eggs in a separate bowl until the mixture is evenly blended. Add a pinch of salt and white pepper. Pour the eggs into the frying pan. Keep stirring gently over the lowest heat setting using a flat spatula, scraping the bottom of the pan, until you get a creamy mixture after about 4 minutes. Stir in the shoestring fries and serve immediately. Sprinkle chopped parsley on the top before serving.
Tip: make your own fries: cut potatoes into 1 x 1-mm strips, toss with a tablespoon of olive oil and fry in batches in an air fryer at 180°C for about 20 minutes. Shake regularly.
